Total Time: 60 min
Servings: 9
Ingredients:
1/2 cup flour
1 cup sugar
1/4 cup brown sugar
2 eggs
1 stick of butter (room temp)
1/2 tsp salt
1/2 cup cocoa powder
1 tbsp vanilla
1 tbsp vegetable oil
1 cup chocolate chips + another 1/2 cup for ganache
1/2 cup heavy cream
Raspberries
Directions:
Preheat oven to 350.
In a bowl mix your butter and sugars. Once combined add in your eggs, vanilla and oil and stir until everything is well mixed together.
Add in your cocoa powder and salt. Mix until you have a chocolatey mixture.
Gently fold in your flour - do not over mix!
Add in your chocolate chips and combine.
Pour your brownie mix into a greased baking dish and bake for 30-35 minutes or until the top is solid and your knife comes out clean.
Once baked let cool for 10 minutes.
While your brownies are cooling it is time to make your ganache. Bring your heavy cream to a light simmer on the stove. Once simmering, turn off the heat and add your remaining chocolate chips. Whisk until the ganache is glossy and all your chocolate is melted.
Once brownies are cooled, spread your ganache over the top and top with your raspberries.
Let the ganache harden just a little and enjoy!
